Swedish Meatballs

Swedish meatballs are a favorite meal at our house. It reminds me of the many times I've eaten them at IKEA. Too bad IKEA is so far away from where we live now. My husband went on a LDS mission to Sweden and ate lots of meatballs there. However people didn't make their own meatballs, they just bought the frozen ones. We found this recipe on some Swedish website a few years ago and love it!

These meatballs are yummiest when served with IKEA's cream gravy and lingonberry preserves. Every time I go to IKEA I buy a whole bunch of each so it will last until we make it to IKEA again.

Swedish Meatballs

1/2 c. fine dry bread crumbs
1/2 c. light cream (see note below)
1/2 c. water
7 oz. ground beef (I use ground turkey too, see note)
7 oz. ground lean pork (see note at bottom)
1 tsp. salt
1/2 tsp. allspice
2 T. grated yellow onion and/or 2 crushed garlic cloves
1 egg, beaten
3 T. margarine or butter (optional)

Mix breadcrumbs, cream, and water. Set aside for 5 minutes. Work together the beef, pork, salt, allspice and onion. Gradually add breadcrumbs, then the egg. Blend well and fry small sample to test the seasoning. Shape into balls. Heat part of the margarine or butter in a skillet (or just add the meatballs straight to the pan -- they usually don't stick too bad). Add 10-15 meatballs. Fry over moderate heat until meatballs are beautifully browned and cooked tlyhrough.

Serve with boiled red potatoes or mashed potatoes. Top with IKEA cream gravy or use a brown gravy mix.

NOTES:
I usually don't have cream on hand, so instead of using cream and water, I mix 1/2 c. bread crumbs with 1/2 c. milk and let sit for 5 minutes. This works just as well as the original recipe. If the meatball mixture is too wet after adding eggs, I mix in some dry bread crumbs.

I usually buy one package (1 lb.) ground pork and divide it into four ziploc bags. Each time I make meatballs, I use one bag of ground pork and then how ever much more ground turkey or beef I want (depending on how many meatballs I want to make). My meatballs usually have a little ground pork, turkey, and beef in them.

  4. Loved this meal Jenny! I'm not really a meatball person, but you may have converted me when we tried the ones you made. Thanks again for letting us stay at your house and feeding us dinners. The only downside is that Keith has higher expectations for our dinners now!

  5. Hey Jenny, Have you ever tried making the cream sauce from scratch? I've been craving these lately, but I don't think I'll be near an IKEA for... quite a while.

    1. Hi Kylie,

I haven't made the gravy from scratch before. I usually stock up when we're at IKEA. I'd give you some, but I'm out. :( Our Best Bites has a gravy recipe along with their Swedish meatball recipe. I haven't tried it though. I have the cookbook w/the recipe if you'd like it.
