Week 84 Menu and Caramel Brownies

I made these caramel brownies yesterday.  They are perfect to make and then share.  Or you can make them in the middle of the night with your roommates, like I used to do, and help yourself gain that "freshman 15".  They are delicious!

My daughter woke up this morning and said, "I know what I want for breakfast:  a hot dog and a brownie."  She thought I was really mean when I told her no.  She had it for lunch instead.

First things first, then I'll get to the recipe.  Here's my menu for the week:

Monday:  easy night, leftovers or something

Tuesday:  meatball sandwiches

Wednesday:  pizza

Thursday:  sesame chicken w/rice

Friday:  mini turkey meatloaves, twice baked potatoes

Saturday: sloppy joes (still haven't made them)

Sunday: chicken stroganoff w/whole wheat egg noodles

Caramel Brownies
recipe from my friend and former roommate, Sue Ann

1 lb. caramels
2/3 c. evaporated milk, divided into 2 - 1/3 c. portions (I used fat-free)
1 German Chocolate cake mix
1/2 c. melted butter ( I substituted 1 T. of butter w/applesauce -- you could probably substitute more, but I was afraid I'd ruin them)
1 c. chocolate chips (I used less, I just eyeballed it)
1 c. chopped nuts (I left these out)

Melt caramels and 1/3 c. evaporated milk in double boiler and stir until smooth.

In large bowl combine cake mix, melted butter, 1/3 c. evaporated milk and nuts.  Stir by hand until well mixed.  Press half of mixture in greased and floured (or spray w/Pam baking spray) 9x13 pan.  Bake at 350 for 6 minutes.

Sprinkle chocolate chips over crust.  Pour caramel mixture over chocolate chips.  Crumble rest of cake mixture over caramels (or flatten sections of dough in your hand and lay on top of caramel layer).  Return to oven for 15-18 minutes.  Cool completely, then cut into squares.

Week 394 Menu

Hi there!  This week is flying by!  So excited that we've been having blue skies and warmer weather.  Our snow is almost all melted and little bulbs are sprouting in the flower beds.  However, we had our 10th snow/ice day last week!!!  Hopefully it was the last one. Life has been busy, busy and I need to plan out the rest of our week's menus, even though it's already Thursday.  Here's what we've eaten so far and what I'm planning: Monday:  chicken stirfry, rice/quinoa Tuesday: breakfast for dinner Wednesday: flatbread pizzas Thursday:  roasted butternut squash, pasta, chicken sausage Friday: tacos Saturday: leftovers Sunday: pot roast, mashed potatoes, one hour rolls Alrighty, that's what we're eating this week.  How about you?  What's on your menu this week?  Feel free to share.  I love it when you do! Don't like your house to smell like food? I've got a kitchen tip for that!

I have a smallish, one story house and if I cook food that is kind of smelly, like onions, the smell tends to linger in every room.  This is a pet peeve of mine and (also my husband's).  Over the years I've found a few ways to cook smelly food without smelling up the kitchen. Use your garage!   I use my garage quite often to cook things in.  I open the window and it airs out, especially when you open the garage door.  I'm sure my neighbors wonder what I'm cooking. I've used two different kitchen appliances in the garage:  my crockpot and my food dehydrator. Crockpot - I did this very thing today since I'm simmering chicken, onions, carrots and celery to make chicken noodle soup tonight.  I don't want my house to smell like onions all day, so I plugged it in on my husband's workbench.   Food dehydrator - when I make jerky, I plug the food dehydrator in in the garage.  I don't really want my house to smell like meat for hours
