Before I get to my menus, just wanted to give you an update on one of the recipes that I tried last week in my menu: Baked Pasta with Ham and Cheesy Creamy Cauliflower Sauce from Our Best Bites. I was really excited to try this recipe and even splurged a little and bought some Pecorino Romano cheese to use in it. However it was disappointing and my kids hated it! If you do try the recipe this is what I would do differently:
- I wouldn't use wheat noodles, regular white pasta noodles. I think they soak up the sauce better.
- Add some cream or half and half or butter to the sauce.
- Make sure you really blend up the cauliflower sauce really well. I used my food processor and then wished I would have used my blender to get more smooth.
- Lastly, I would add some chicken to it instead of using ham.
Now onto my menu...
Monday: 7up marinated chicken, rice or pasta salad, veggies
Tuesday: quick french dip with green chili
Wednesday: pizza
Thursday: slow cooker tamale pie
Friday: Italian meatball soup, french bread
Saturday: chicken gyros, homemade pitas
Sunday: grilled marinated steaks, fried potatoes, salad

We all got sick, one by one, last week, so it derailed some of my menu planning. We ended up having pancakes two different nights last week since that was what sounded good to a family of sick people. So, a couple of repeats from last week:
