2. Enjoy tomatoes from my garden.
3. Can my own salsa.
I had six ripe tomatoes sitting on my counter this morning that I picked from my garden. I'd been hoping that my garden would have produced a lot of tomatoes. It was doing a great job until a deer hopped the fence and munched on a few big tomatoes and ate quite a few little tomatoes. (This made me a little mad and sad.)
We've been enjoying tomatoes in our salads and sandwiches, but I didn't want to waste those big beautiful tomatoes that we had sitting in our "tomato" bowl. So, I decided to make salsa out of them, even though I didn't have enough to make a full batch of the recipe that I used. I grilled the tomatoes for a few minutes, so I could skin them.
It was a lot of chopping and peeling, but it was worth it.
I went to the farmer's market this morning and picked up a bag of freshly roasted green chile. I've been wanting to buy some for a long time, but haven't ever done it. Next time I'll buy some and roast them myself. Green chile is one of my favorite things about living in New Mexico. It's yummy and I love smelling it in the fall while it's being roasted.
My little guy and I also picked up an onion and a few jalapenos from the farmer's market. I thought about buying some more tomatoes, but I didn't want to pay $3 per pound when I have green tomatoes at my house already. I'll just make another small batch later.
Anyway...I used this recipe from Simply Recipes. I ended up making three pints from my four cups of tomatoes. It is super delicious!
Oh, and next time I chop chilies or jalapenos, I'm wearing gloves. I've never had a problem with pepper burns on my fingers before, but I've got a few today. Ouch!
