Friday Favorite ... Creme Filled Chocolate Cupcakes

Three years ago I posted my recipe for Creme Filled Chocolate Cupcakes that our a family favorite around Easter-time.  I'm giving the cupcakes a new, updated post with some better pictures and instructions.  You can see my first post here...
 
 
My husband's family has a fun tradition of having a Easter picnic on the desert the day before Easter. Lots of family comes and meets at their "Eastering" picnic spot. The food always includes marinated grilled chicken/turkey (recipe to come), hamburgers, hot dogs, salads, etc. and if you're lucky there will be some of these cupcakes too.
 

 
Aunt Shaunna is the one that would make these fabulous cupcakes. I'm still trying to perfect the art of piping the creme filling into the center. 
 
 
I tell my kids that these are "surprise" cupcakes, because it will be a surprise how much filling there is inside. You never know until you take a bite.
 


Creme Filled Chocolate Cupcakes

Yield: 2 dozen cupcakes
 
Ingredients
  • 1 box (or 24) chocolate cupcakes, baked and cooled
  • 3 T. flour
  • 3 T. sugar
  • 2/3 c. milk
  • 1/2 c. butter (or shortening)
  • 1/3 c. + 1 T. granulated sugar
  • 1/2 tsp. vanilla
  • 1/8 tsp. salt

Filling and Frosting Directions: 
  1. Mix together sugar and flour in saucepan. Slowly add milk and cook until thick, stirring often. Cool completely.
  2. In mixer, mix together butter, sugar, vanilla, salt. Add cooled milk/flour mixture. Beat on high for five minutes.   
  3. Spoon creme filling into frosting bag. Insert frosting tip into the top of the cupcake and squeeze. (It's kind of hard to tell how much you're getting into the cupcake, so squeeze as much or as little as you like).
  4. Frost cupcakes with chocolate frosting (make your own or use some from the store).

Don't like your house to smell like food? I've got a kitchen tip for that!

I have a smallish, one story house and if I cook food that is kind of smelly, like onions, the smell tends to linger in every room.  This is a pet peeve of mine and (also my husband's).  Over the years I've found a few ways to cook smelly food without smelling up the kitchen. Use your garage!   I use my garage quite often to cook things in.  I open the window and it airs out, especially when you open the garage door.  I'm sure my neighbors wonder what I'm cooking. I've used two different kitchen appliances in the garage:  my crockpot and my food dehydrator. Crockpot - I did this very thing today since I'm simmering chicken, onions, carrots and celery to make chicken noodle soup tonight.  I don't want my house to smell like onions all day, so I plugged it in on my husband's workbench.   Food dehydrator - when I make jerky, I plug the food dehydrator in in the garage.  I don't really want my house to smell like meat for hours

The Best French Bread I've Ever Made

This is the best french bread I've ever made.  I got this recipe from my friend, Nikki, who gave us some of this bread as a thank you for my hubby helping them move a piano.  I remember it being delicious and we gobbled it up fast.  I was intimidated for some reason by the recipe and waited a few years before I made it. We needed some bread for to make some turkey, provolone, avocado sandwiches, so I made some of this bread and it was perfect!  We sliced one loaf like they do at Subway.  Then later I made normal shaped sandwiches with the rest of the bread.  Delicious... light and fluffy and yummy!
